  • 1.5 pounds boneless, skinless chicken thighs or breasts
  • 34 medium carrots, peeled and chopped
  • 12 stalks celery, chopped
  • ½ medium onion, chopped
  • 4 cups low-sodium chicken stock or broth
  • 1 cup cream or half and half
  • 1 pound potato gnocchi
  • 3 cups baby spinach
  • 2 Tablespoons fresh parsley, chopped
  • 45 cloves garlic, minced
  • 1 Tablespoon Italian seasoning
  • Salt and black pepper to taste
  • 1 teaspoon Better than Bouillon chicken seasoning base (optional)
  • Pinch of red pepper flakes (optional)
  • 12 Tablespoons cornstarch

Instructions

  1. Place chicken, carrots, celery, onion, garlic, parsley, Italian seasoning, salt, and pepper in the slow cooker.
  2. If using Better than Bouillon and red pepper flakes, add them now and stir gently.
  3. Pour in the chicken stock and stir to combine.
  4. Cover and cook on low for 6-8 hours or on high for 4 hours.
  5. Once cooked, shred the chicken directly in the pot with two forks.
  6. Whisk together cream (or half and half) with cornstarch until smooth; stir into the soup.
  7. Add gnocchi and spinach; cover again and cook on high for an additional 30-45 minutes.
  8. Adjust seasoning if needed before serving warm.
