Ingredients

Scale
  • 1 package (20 oz) cheese tortellini
  • 1 lb beef sirloin, thinly sliced
  • 1 tablespoon olive oil
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • ½ cup shredded provolone cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Prepare the tortellini according to package instructions; drain well.
  2. In a large skillet, heat olive oil over medium-high heat. Cook the thinly sliced beef until browned on all sides (about 5 minutes). Remove from skillet.
  3. In the same skillet, sauté sliced bell pepper, onion, and minced garlic until softened (5-7 minutes).
  4. In a separate saucepan over medium heat, melt butter and whisk in flour for about a minute to create a roux. Gradually add whole milk while whisking continuously until thickened (3-4 minutes). Stir in provolone and Parmesan cheeses until melted.
  5. Combine cooked tortellini, browned beef, and sautéed vegetables with the cheese sauce; stir gently to coat evenly.
  6. Serve hot with optional garnishes like parsley or additional cheese.
