- 1–1/2 lbs Little Potatoes Company White Creamer potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Chopped fresh parsley
Instructions
- Poke each potato with a fork and microwave them in a bowl for about 8 minutes, flipping halfway through.
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it.
- Toss the microwaved potatoes in olive oil, salt, and pepper until well-coated.
- Place the potatoes on the baking sheet and gently smash them to about 3/8" thick.
- Roast for 6 minutes, flip them over, and roast for an additional 6 minutes until golden brown.
- Sprinkle with chopped parsley before serving.
