  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 2 teaspoons vanilla
  • 3 1/4 cups all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 2 1/2 cups fresh or frozen cranberries
  • 2/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon orange zest
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla
  • 3/4 cup powdered sugar, sifted
  • 4 tablespoons whole milk
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a stand mixer, cream together unsalted butter and both sugars until light and fluffy.
  3. Add the egg and vanilla, mixing until combined.
  4. In another bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually add to the wet mixture until just combined.
  5. Set aside 2 cups of dough for topping; press the rest into an 8×8-inch parchment-lined pan.
  6. Pre-bake the crust for 15 minutes or until golden brown.
  7. Mix cranberries, sugar, cornstarch, orange zest, juice, and vanilla in a bowl; pour over the crust.
  8. Crumble reserved dough on top of the cranberry filling.
  9. Bake for another 45 minutes until golden brown.
  10. Allow to cool completely before glazing with powdered sugar mixed with milk and vanilla.
