- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 large egg, room temperature
- 2 teaspoons vanilla
- 3 1/4 cups all-purpose flour, spooned and leveled
- 3/4 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon kosher salt
- 2 1/2 cups fresh or frozen cranberries
- 2/3 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon orange zest
- 1 tablespoon orange juice
- 1 teaspoon vanilla
- 3/4 cup powdered sugar, sifted
- 4 tablespoons whole milk
- 1/2 teaspoon vanilla
Instructions
- Preheat your oven to 350°F (175°C).
- In a stand mixer, cream together unsalted butter and both sugars until light and fluffy.
- Add the egg and vanilla, mixing until combined.
- In another bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually add to the wet mixture until just combined.
- Set aside 2 cups of dough for topping; press the rest into an 8×8-inch parchment-lined pan.
- Pre-bake the crust for 15 minutes or until golden brown.
- Mix cranberries, sugar, cornstarch, orange zest, juice, and vanilla in a bowl; pour over the crust.
- Crumble reserved dough on top of the cranberry filling.
- Bake for another 45 minutes until golden brown.
- Allow to cool completely before glazing with powdered sugar mixed with milk and vanilla.
