  • 1 cup dried cranberries
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup chopped fresh parsley
  • 1/2 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon celery seeds
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)

Instructions

  1. Thinly slice the cabbage and place it in a large bowl.
  2. Core and dice apples into bite-sized pieces and add them to the bowl.
  3. Sprinkle in dried cranberries.
  4. If using nuts, chop them coarsely and add along with chopped parsley.
  5. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey (or maple syrup), and Dijon mustard until smooth.
  6. Season the dressing with celery seeds, salt, and pepper, then pour over the slaw mixture.
  7. Gently toss all ingredients until well combined.
