  • 1 small white onion, peeled and diced
  • 1 bay leaf
  • 1.5 tablespoons Old Bay seasoning
  • 14 ounces unsweetened coconut milk
  • 2 large handfuls of kale, roughly chopped

Instructions

  1. Heat a pot over medium heat and add a splash of vegetable stock to sauté onions, garlic, carrots, and celery until tender.
  2. Stir in sweet potato, mushrooms, wild rice, bay leaf, and Old Bay seasoning. Pour in vegetable stock and bring to a gentle boil.
