- 5 eggs
- 1/2 cup powdered sugar
- 8 oz mascarpone
- 1/2 cup coconut cream
- 1 cup heavy cream
- 14 oz sweetened condensed milk
- 13.5 oz coconut milk
- 1/2 cup alcohol-free vanilla extract
- 1 tsp cinnamon
- 2 cups coconut flakes
- 24 ladyfingers
Instructions
- Separate 5 egg yolks into a bowl, whisk with 1/4 cup powdered sugar until pale yellow.
- Mix in 8 oz mascarpone, 1/2 cup coconut cream, and half of the coconut milk until smooth.
- In another bowl, beat 1 cup heavy cream with 1/4 cup powdered sugar to stiff peaks and gently fold into the mascarpone mixture.
- Chill the cream mixture while preparing the soaking liquid by mixing remaining condensed milk, evaporated milk, coconut milk, alcohol-free vanilla extract, and cinnamon.
- Dip ladyfingers briefly into the soaking liquid and arrange them at the bottom of a serving dish.
- Layer half of the cream mixture over ladyfingers and sprinkle with coconut flakes.
- Repeat layers and finish with a sprinkle of cinnamon and more coconut flakes on top.
- Cover and refrigerate for at least 12 hours before serving.
