  • 2 tbsp granulated sugar
  • ½ cup unsalted butter
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip
  • 2 (3.4 oz) boxes of instant coconut cream pudding mix
  • 3 cups half-and-half

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter. Press firmly into a 9×13 inch dish and bake for 10 minutes.
  2. Beat softened cream cheese and powdered sugar until smooth. Add coconut extract and half of the Cool Whip; gently fold to combine.
  3. Whisk together pudding mix and half-and-half until thickened (about two minutes). Pour over the cream cheese layer.
  4. Spread remaining Cool Whip over the pudding layer and top with toasted shredded coconut.
  5. Cover and refrigerate for at least six hours or overnight before serving.
