  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed
  • 2 (3.4 oz) boxes instant coconut cream pudding mix
  • 3 cups half-and-half
  • 8 oz Cool Whip (for topping)
  • 1 cup sweetened shredded coconut, toasted

Instructions

  1. Prepare the crust: Mix graham cracker crumbs and sugar in a bowl. Add melted butter and combine thoroughly. Press into a greased 9×13 inch dish.
  2. Make the cheesecake layer: Beat softened cream cheese and powdered sugar until smooth. Mix in coconut extract and fold in one container of Cool Whip. Spread evenly over the crust.
  3. Prepare the pudding layer: Whisk together pudding mix and half-and-half until thickened. Pour over the cheesecake layer and spread evenly.
  4. Top with Cool Whip: Spread another container of Cool Whip over the pudding layer.
  5. Add toasted coconut on top for garnish.
  6. Chill: Cover and refrigerate for at least six hours or overnight before serving.
