  • 1/2 cup unsalted butter, softened (1 stick)
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar (packed)
  • 11/2 teaspoons ground cinnamon
  • 1 large apple (peeled, cored, and chopped into small pieces)
  • 2 tablespoons brown sugar
  • 3/4 cups confectioners’ sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8.5 x 4.5 inch loaf pan by greasing and flouring it.
  2. Whisk together the flour, baking powder, and salt in one bowl.
  3. In another bowl, cream the softened butter with granulated sugar and vanilla using an electric mixer until smooth.
  4. Incorporate eggs one at a time into the mixture.
  5. Gradually add the dry ingredients alternating with milk until just combined.
  6. In a separate bowl, mix chopped apples with brown sugar and cinnamon for the filling.
  7. Layer half of the batter in the pan, followed by half of the apple mixture; swirl lightly.
  8. Add remaining batter and top with remaining apples; sprinkle with cinnamon-sugar topping.
  9. Bake for 45 to 55 minutes or until a toothpick comes out clean.
  10. Cool before glazing with confectioners' sugar, cinnamon, and water mixture.
