  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 avocado, sliced
  • 1/2 cup red onion, diced
  • Lime wedges for serving

Instructions

  1. In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper to make the marinade.
  2. Marinate the flank steak in the mixture for at least 30 minutes.
  3. Cook rice according to package instructions.
  4. Heat black beans in a saucepan until warm.
  5. Grill marinated steak on medium-high heat for about 4-5 minutes per side until medium-rare.
