- 3.5 oz dark chocolate, chopped
- 4.5 oz white chocolate, chopped
- 5 oz milk chocolate, chopped
- ⅓ cup heavy cream
Instructions
- Preheat oven to 350°F (180°C). Grease two 8-inch round pans and line with parchment paper.
- In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk eggs, milk, sour cream, vegetable oil, and vanilla until smooth. Dissolve espresso powder in hot water and add to the mixture.
- Combine dry ingredients with wet ingredients until fully incorporated.
- Divide batter between prepared pans and bake for about 35 minutes or until a toothpick comes out clean. Cool completely before trimming tops flat.
- For the mousse, heat 1 cup of cream with vanilla until steaming. Whisk egg yolks with sugar and cornstarch until pale; gradually add hot cream to temper yolks. Return to heat until thickened, then divide into two bowls—add dark chocolate to one and white chocolate to the other.
- Whip remaining cream to stiff peaks and fold into each chocolate mixture gently.
- Assemble the cake by layering dark mousse on one cake layer, followed by white mousse; chill for 30 minutes before adding the second layer.
- For the ganache, heat heavy cream until steaming; pour over chopped milk chocolate, let sit for one minute, then stir until smooth.
- Pour ganache over assembled cake for that beautiful finish.
