  • 250g all-purpose flour
  • 30g sugar
  • 10g fresh yeast
  • 150g eggs (about 3 large)
  • 165g unsalted butter
  • 25 cl whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 50g sugar (for custard)
  • 20g cornstarch
  • 120g mini chocolate chips

Instructions

  1. In a stand mixer, combine flour, sugar, salt, and crumbled yeast. Add beaten eggs and knead until thick and smooth. Gradually incorporate softened butter until dense and slightly sticky.
  2. Cover the dough and let it rise for about 2 hours until doubled in size.
  3. For the custard, heat milk and butter with the vanilla pod. Whisk together egg yolks, sugar, cornstarch, and flour; gradually mix in hot milk. Cook until thickened, then cool.
  4. Roll out dough into a rectangle, spread half of the cooled custard on one side, sprinkle with chocolate chips, fold over, and cut into rectangles. Let rise again for about 2 hours.
  5. Preheat oven to 350°F (180°C). Brush with an egg wash and bake for 10-12 minutes until golden brown.
  6. Prepare sugar syrup by boiling water and sugar until dissolved; brush over baked brioches.
