- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- 2 garlic cloves, minced
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup plain Greek yogurt
- 1/2 cucumber, grated and squeezed to remove excess water
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1 tablespoon fresh dill, chopped
- 2 cups cooked rice, quinoa, or cauliflower rice
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives
- Fresh parsley or dill, for garnish
Instructions
- Marinate the chicken by mixing olive oil, lemon juice, oregano, minced garlic, smoked paprika, salt, and pepper in a bowl. Coat the chicken well and refrigerate for at least 15 minutes.
- Heat a skillet over medium heat and cook the chicken for 6-7 minutes per side until golden brown and cooked through (165°F/75°C). Let rest before slicing.
- Prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, olive oil, lemon juice, minced garlic, dill, salt, and pepper in a bowl.
- Assemble the bowls by adding cooked rice (or quinoa/cauliflower rice), sliced chicken, cherry tomatoes, cucumbers, red onions, olives (optional), and tzatziki sauce.
