  • 2 large boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 4 oz cream cheese
  • 1 cup shredded Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 oz uncooked pasta (your choice)
  • ½ cup shredded mozzarella cheese (optional)
  • Fresh parsley or basil (for garnish)

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Sprinkle minced garlic, Italian seasoning, salt, and pepper over the chicken.
  3. Pour chicken broth over the seasoned chicken.
  4. Cover and cook on low for 4–5 hours until chicken is tender.
  5. Shred the chicken with two forks right in the pot.
  6. Stir in cream cheese and Parmesan until melted into a creamy sauce.
  7. Add uncooked pasta and stir well; cover and cook on high for 30–45 minutes until pasta is cooked through.
  8. Optionally, sprinkle mozzarella cheese on top during the last few minutes of cooking. Garnish with fresh herbs before serving.
