  • 1/2 c (125g) canned pumpkin, blotted
  • 2 tsp (10ml) vanilla extract
  • 1/2 c (100g) granulated sugar for coating
  • 1/2 tsp pumpkin or chai spice blend for coating

Instructions

  1. Make brown butter: Melt butter in a saucepan over medium heat until browned; let cool.
  2. Blot pumpkin: Absorb excess moisture from canned pumpkin using paper towels.
  3. Mix dry ingredients: Whisk flour, spice blend, baking soda, and salt in a bowl.
  4. Combine wet ingredients: In another bowl, mix cooled butter, brown sugar, and maple syrup.
  5. Add egg yolk and pumpkin: Stir in egg yolk, pumpkin puree, vanilla extract, and optional maple extract.
  6. Combine mixtures: Gradually add dry ingredients to wet mixture until just combined.
