Description

Bruschetta Chicken Pasta is a vibrant and satisfying dish that combines juicy cherry tomatoes, aromatic basil, and tender chicken with pasta for a delightful meal that’s perfect for any occasion.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Optional: Extra basil leaves and balsamic glaze for garnish
  • 1/4 cup grated Parmesan cheese for serving

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat and cook chicken for 5-7 minutes per side until golden brown. Let rest before slicing.
  4. In a bowl, mix cherry tomatoes, garlic, basil, balsamic vinegar, olive oil, and salt to make the bruschetta topping.
  5. Combine cooked pasta with any chicken drippings in the skillet. Layer sliced chicken on top and add bruschetta mixture.
  6. Serve with grated Parmesan cheese and extra basil leaves.
