- 2 boneless, skinless chicken breasts
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 8 oz spaghetti or penne pasta
- 2 cups cherry tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- Optional: Extra basil leaves and balsamic glaze for garnish
- 1/4 cup grated Parmesan cheese for serving
Instructions
- Cook the pasta in salted boiling water until al dente. Drain and set aside.
- Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
- Heat olive oil in a skillet over medium heat and cook chicken for 5-7 minutes per side until golden brown. Let rest before slicing.
- In a bowl, mix cherry tomatoes, garlic, basil, balsamic vinegar, olive oil, and salt to make the bruschetta topping.
- Combine cooked pasta with any chicken drippings in the skillet. Layer sliced chicken on top and add bruschetta mixture.
- Serve with grated Parmesan cheese and extra basil leaves.
