  • 1 teaspoon kosher salt
  • 5 Tablespoons unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 Tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 Tablespoons unsalted butter (melted and cooled)
  • 2 1/2 Tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together room temperature unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
  3. Beat in eggs and vanilla extract until smooth.
  4. In another bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and salt; gradually add to the wet mixture until combined.
  5. Chill the dough for 1 hour.
  6. Prepare the filling by mixing softened butter, brown sugar, cinnamon, and cake flour until smooth; roll into balls.
  7. Scoop dough portions, create wells for filling, seal them well, and place on baking sheets.
  8. Bake for 11-13 minutes or until edges are lightly golden.
  9. While cooling on racks, mix glaze ingredients and drizzle over cookies.
