  • 5 Tablespoons unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 Tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 Tablespoons unsalted butter (melted and cooled)
  • 2 1/2 Tablespoons milk

Instructions

  1. Cream together room temperature unsalted butter, granulated sugar, and light brown sugar until fluffy.
  2. Add eggs and vanilla extract; mix until combined.
  3. In a separate bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and salt. Gradually add to the wet mixture until just combined. Chill dough for one hour.
  4. Preheat oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  5. Mix filling ingredients (softened butter, light brown sugar, cinnamon, cake flour) until smooth. Form small balls of filling.
  6. Portion chilled dough, create wells for filling, seal edges tightly around the filling balls.
