Ingredients

Scale
  • 4 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 packet (7g) instant yeast
  • ½ teaspoon salt
  • ½ cup whole milk (warmed)
  • 2 large eggs
  • ¼ cup unsalted butter (melted)
  • 2 cups whole milk (for pastry cream)
  • ½ cup granulated sugar (for pastry cream)
  • 4 large egg yolks
  • ¼ cup cornstarch
  • 2 teaspoons vanilla extract
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  1. Prepare the Dough: Mix flour, sugar, yeast, and salt in a bowl. Add warmed milk, eggs, melted butter, and optional lemon zest. Combine until smooth.
  2. Knead the Dough: On a floured surface, knead the dough for 8-10 minutes until elastic.
  3. Let It Rise: Place dough in a greased bowl and cover with a towel; let rise for about an hour until doubled.
  4. Make Pastry Cream: Warm milk with sugar in a saucepan. Whisk egg yolks and cornstarch separately; combine gradually with warm milk. Cook until thickened, then stir in vanilla and butter.
  5. Shape Bomboloni: Roll out risen dough and cut into circles; let them rise again for about 30 minutes.
  6. Fry the Doughnuts: Heat vegetable oil to 350°F (175°C) and fry bomboloni until golden brown on both sides.
  7. Fill the Bomboloni: Use a piping bag to fill cooled bomboloni with pastry cream through a hole in the side.
  8. Serve: Dust with powdered sugar before serving.
