- 4 yellow onions (thinly sliced)
- 2 pounds Yukon Gold potatoes (washed and chopped)
- 4 tablespoons salted butter (or non-dairy butter)
- 3/4 cup half & half or full-fat coconut milk
- 1 teaspoon kosher salt
- Optional toppings: grated Parmesan cheese, chopped chives, fresh thyme, fresh sage
Instructions
- Heat olive oil in a skillet over medium heat and add sliced onions. Cook for 40-50 minutes until golden brown.
- While onions are cooking, boil chopped Yukon Gold potatoes in salted water for about 20 minutes until fork-tender.
