  • 2 tablespoons olive oil
  • 4 yellow onions (thinly sliced)
  • 2 pounds Yukon Gold potatoes (washed and chopped)
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half or full-fat coconut milk
  • 1 teaspoon kosher salt
  • Optional toppings: grated Parmesan cheese, chopped chives, fresh thyme, fresh sage

Instructions

  1. Heat olive oil in a skillet over medium heat and add sliced onions. Cook for 40-50 minutes until golden brown.
  2. While onions are cooking, boil chopped Yukon Gold potatoes in salted water for about 20 minutes until fork-tender.
  3. Drain potatoes and transfer to a mixing bowl. Mash until smooth.
  4. Mix in butter, kosher salt, and half & half (or coconut milk) until well combined.
  5. Fold in half of the caramelized onions and grated Parmesan cheese until mixed.
  6. Serve warm, garnished with remaining onions and fresh herbs.
