  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves

  • 3 oz cooking oil
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cup chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together the flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, combine the cooking oil, eggs, sugar, vanilla extract, and pumpkin puree until smooth. Stir in one cup of chocolate chips.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Grease an 8" x 4" loaf pan with oil spray and pour in the batter. Sprinkle remaining chocolate chips on top.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Allow to cool slightly before slicing.
