  • 1 small diced onion
  • 4 minced garlic cloves
  • 3 cups low-sodium beef broth
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp butter
  • Salt
  • Pepper
  • 1 tsp Italian seasoning

Instructions

  2. Add ground beef, cooking until browned. Drain excess fat if necessary.

  4. Add uncooked rice, beef broth, Italian seasoning, salt, and pepper; mix well.
  5. Bring to a boil, then reduce heat to simmer for about 18-20 minutes until rice absorbs broth.
  6. In a separate saucepan on low heat, melt remaining butter and stir in cheeses and milk until smooth.
  7. Pour cheese sauce into the skillet with beef mixture; combine thoroughly and cook uncovered for another few minutes.
  8. Serve warm, garnished with fresh parsley if desired.
