  • 1 small diced onion
  • 4 minced garlic cloves
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups low-sodium beef broth
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 3 tbsp butter

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Sauté the diced onion for about 3-4 minutes until translucent.
  2. Add ground beef to the skillet, breaking it apart as it cooks until browned. Drain excess fat if necessary.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add uncooked rice, beef broth, Italian seasoning, salt, and pepper; stir well.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  6. In a separate saucepan over low heat, melt remaining butter and mix in cheddar cheese, Parmesan cheese, and milk until smooth.
  7. Pour the cheese sauce into the skillet with the beef and rice mixture; stir until well combined.
  8. Cook uncovered for another couple of minutes before serving warm.
