  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2/3 cup mashed ripe banana (about 2 medium sized)
  • 1/2 cup sour cream
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1 teaspoon cinnamon
  • 3/4 cup graham cracker crumbs
  • 2/3 cup whole milk
  • 1 cup miniature chocolate chips, divided
  • 1 cup miniature vegan marshmallows bits, divided

Instructions

  1. Preheat your oven to 400°F and line a muffin pan with liners.
  2. In a bowl, mix melted butter with brown sugar, then add egg, vanilla extract, mashed bananas, and sour cream until well combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
  4. Gradually combine wet and dry ingredients alternately with milk until just mixed.
  5. Fold in chocolate chips and vegan marshmallows.
  6. Fill muffin liners two-thirds full and top with remaining chocolate chips and marshmallows.
  7. Bake for 16 minutes or until a toothpick comes out clean. Cool before serving.
