  • 1 lb ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 clove garlic, minced
  • 1 tsp Italian seasoning
  • 1/4 cup fresh parsley, chopped
  • 1 egg
  • Salt and black pepper to taste
  • 1 tbsp butter
  • Pinch of nutmeg

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix ground chicken, ricotta, Parmesan, breadcrumbs, garlic, Italian seasoning, parsley, egg, salt, and pepper until just combined; form into meatballs.
  3. Place meatballs on the baking sheet and bake for 20-25 minutes until golden brown and cooked through.
  4. Meanwhile, sauté spinach in butter until wilted; set aside. In the same skillet, cook garlic in butter until fragrant.
  5. Add heavy cream to the skillet; simmer and stir in Parmesan until thickened. Mix in wilted spinach.
  6. Combine meatballs with sauce and serve over pasta or zucchini noodles.
