Ingredients

  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, chopped jalapeños, green onion, garlic powder, salt, and pepper until well mixed.
  2. Lay an eggroll wrapper on a clean surface. Place about 2 tablespoons of the filling diagonally across the center.
  3. Fold the bottom corner over the filling, then fold in the sides toward the center and roll tightly to seal.
  4. Heat vegetable oil in a deep skillet to 350°F (175°C).
  5. Fry eggrolls seam side down in batches for 3-4 minutes or until golden brown and crispy.
  6. Remove from oil and drain on paper towels before serving hot.
