- 8 eggroll wrappers
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 2 jalapeño peppers, seeded and finely chopped
- 1 green onion, finely chopped
- Vegetable oil for frying
Instructions
- In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, chopped jalapeños, green onion, garlic powder, salt, and pepper until well mixed.
- Lay an eggroll wrapper on a clean surface. Place about 2 tablespoons of the filling diagonally across the center.
- Fold the bottom corner over the filling, then fold in the sides toward the center and roll tightly to seal.
- Heat vegetable oil in a deep skillet to 350°F (175°C).
