  • 300 g all-purpose flour
  • 60 g granulated sugar
  • 1 tsp salt
  • 220 g unsalted butter (cold)
  • 110 g water
  • 1 kg apples (Pink Lady or Fuji)
  • 75 g unsalted butter (for filling)
  • 190 g brown sugar
  • 1¼ tsp ground cinnamon
  • 1¼ tbsp cornstarch
  • ¼ tsp salt (for filling)
  • 2½ tbsp water (for filling)
  • Almond flour (for topping)
  • 1 egg (for egg wash)
  • Vanilla ice cream

Instructions

  1. Prepare the crust by mixing flour, granulated sugar, and salt in a bowl. Cut in cold butter until crumbly, then add cold water until just combined. Chill.
  2. For the filling, peel and slice apples. Melt butter in a pan, add apples with brown sugar, cinnamon, cornstarch, salt, and water. Cook until slightly softened.
  3. Roll out half the chilled dough into a circle and place it in a pie dish. Fill with apple mixture and sprinkle almond flour on top.
  4. Roll out the second half of the dough, cover the filling with it, seal edges, and cut slits in the top for steam.
  5. Brush with egg wash, sprinkle brown sugar, and bake at 180°C (350°F) for about 80 minutes until golden brown.
