- 300 g all-purpose flour
- 60 g granulated sugar
- 1 tsp salt
- 220 g unsalted butter (cold)
- 110 g water
- 1 kg apples (Pink Lady or Fuji)
- 75 g unsalted butter (for filling)
- 190 g brown sugar
- 1¼ tsp ground cinnamon
- 1¼ tbsp cornstarch
- ¼ tsp salt (for filling)
- 2½ tbsp water (for filling)
- Almond flour (for topping)
- 1 egg (for egg wash)
- Vanilla ice cream
Instructions
- Prepare the crust by mixing flour, granulated sugar, and salt in a bowl. Cut in cold butter until crumbly, then add cold water until just combined. Chill.
- For the filling, peel and slice apples. Melt butter in a pan, add apples with brown sugar, cinnamon, cornstarch, salt, and water. Cook until slightly softened.
- Roll out half the chilled dough into a circle and place it in a pie dish. Fill with apple mixture and sprinkle almond flour on top.
- Roll out the second half of the dough, cover the filling with it, seal edges, and cut slits in the top for steam.
- Brush with egg wash, sprinkle brown sugar, and bake at 180°C (350°F) for about 80 minutes until golden brown.
