Ingredients
- 300 g all-purpose flour
- 60 g granulated sugar
- 1 tsp salt
- 220 g unsalted butter (cold)
- 110 g water
- 1 kg apples (Pink Lady or Fuji)
- 75 g unsalted butter (for filling)
- 190 g brown sugar
- 1¼ tsp ground cinnamon
- 2½ tbsp water (for filling)
- Vanilla ice cream (to serve)
Instructions
- For the crust, mix flour, sugar, and salt in a bowl. Add cold butter cubes and blend until crumbly. Gradually add cold water to form a dough. Chill in the fridge.
- For the filling, peel and slice apples. In a pot over medium heat, melt 75 g butter; add apple slices, brown sugar, cinnamon, cornstarch, salt, and water. Cook until bubbling.
- Roll out chilled dough; fit half into a pie dish and fill with the apple mixture. Top with remaining dough and brush with egg wash mixed with water.
- Bake at 180°C (350°F) for about 80 minutes until golden brown.
