  • 30 g light brown soft sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp mixed spice
  • 1 tsp cornflour (cornstarch)
  • 10 g unsalted butter
  • 8 g light brown soft sugar
  • 17 g plain flour
  • 1/8 tsp cinnamon
  • 175 g softened unsalted butter
  • 175 g light brown soft sugar
  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp cinnamon
  • 1/4 tsp mixed spice
  • 175 g softened unsalted butter
  • 350 g icing sugar
  • 1 1/2 tsp cinnamon
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by peeling, coring, and chopping the apples. Cook with light brown sugar, cornflour, cinnamon, and mixed spice over low heat for 10-15 minutes until tender. Allow to cool.
  2. Make the crumble topping by mixing plain flour, light brown sugar, and cinnamon with butter until crumbly. Bake for 10-15 minutes at 180C (375F) until golden.
  3. For the cupcake batter, cream softened butter and light brown sugar until smooth. Add eggs one at a time, followed by folding in self-raising flour, cinnamon, and mixed spice.
  4. Fill cupcake cases with batter and bake at 160C (350F) for 20-25 minutes until golden.
  5. Core cooled cupcakes and fill with apple mixture. Make buttercream frosting by beating softened butter with icing sugar and cinnamon; add milk to desired consistency.
  6. Frost cupcakes and top with remaining apple filling and crumble.
