- 2 medium apples
- 30 g light brown soft sugar
- 1/2 tsp cinnamon
- 1/4 tsp mixed spice
- 1 tsp cornflour (cornstarch)
- 10 g unsalted butter
- 8 g light brown soft sugar
- 17 g plain flour
- 1/8 tsp cinnamon
- 175 g softened unsalted butter
- 175 g light brown soft sugar
- 3 large eggs
- 175 g self-raising flour
- 1/2 tsp cinnamon
- 1/4 tsp mixed spice
- 175 g softened unsalted butter
- 350 g icing sugar
- 1 1/2 tsp cinnamon
- 2–3 tbsp milk
Instructions
- Prepare the apple filling by peeling, coring, and chopping the apples. Cook with light brown sugar, cornflour, cinnamon, and mixed spice over low heat for 10-15 minutes until tender. Allow to cool.
- Make the crumble topping by mixing plain flour, light brown sugar, and cinnamon with butter until crumbly. Bake for 10-15 minutes at 180C (375F) until golden.
- For the cupcake batter, cream softened butter and light brown sugar until smooth. Add eggs one at a time, followed by folding in self-raising flour, cinnamon, and mixed spice.
- Fill cupcake cases with batter and bake at 160C (350F) for 20-25 minutes until golden.
- Core cooled cupcakes and fill with apple mixture. Make buttercream frosting by beating softened butter with icing sugar and cinnamon; add milk to desired consistency.
- Frost cupcakes and top with remaining apple filling and crumble.
