  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F and prepare your baking dish with butter or oil and parchment paper.
  2. In a sauté pan, bring fresh apple cider to a boil until reduced by half (about 5 minutes). Measure out ¾ cup and mix in the diced butter until melted.
  3. In a separate bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Combine the boiled cider mixture into the wet ingredients while whisking. Stir in flour until just combined; do not overmix.
  5. Pour batter into prepared dish and bake for 22-25 minutes until golden brown.
  6. Allow to cool slightly before brushing melted butter on top and sprinkling with a cinnamon-sugar mixture.
