  • 1/3 cup reduced apple cider
  • 1 teaspoon cinnamon
  • 2 tablespoons all-purpose flour

Instructions

  1. Reduce apple cider by boiling with mulling spices until thickened (about 1 hour). Let cool.
  2. Preheat oven to 350°F. Combine crushed cookies, melted butter, salt, and powdered sugar. Press into an 8-inch springform pan and bake for 10 minutes.
  3. Lower oven temperature to 325°F. Beat cream cheese and brown sugar until smooth, then mix in reduced cider, sour cream, vanilla, salt, and cinnamon.
  4. Add eggs one at a time and flour; mix gently to avoid overbeating.
