  • 3 stalks celery, thinly sliced

  • 6 cups chicken broth
  • 1 can (13.5 oz) coconut milk
  • 1 1/4 lbs boneless skinless chicken thighs or breasts
  • 1 bag (10 oz) frozen peas (optional)

  4. Remove the chicken to shred it into bite-sized pieces; return to the pot along with peas (if using) and parsley. Simmer for an additional 5 minutes.
